Wargaming dislike large maps – they want 5 minute games max – so on large inviting maps they design large areas of desert into which you venture at your own peril. Result – it doesn't matter what it looks like – every map is in effect Himmelsdorf.
South – Spotter position in drain at J5&6 is vital for any chance for a south push. Fast scout can always get there before opposition get into their positions. This position is mirrored for both sides. Can spot all td positions. Downside the other guys can assault into the drain and kill the spotter so effective support is important.
As for consistency, I agree the city is the most predictable. However, the north in a medium or TD stationed around A6 can be very advantageous in flanking the city. The bridge provides decent cover from the west, but arty can be an issue. The north is riskier but the payoff can be large if played right. In this circumstance, your heavies went north which is not somethings I would expect from them. City made sense. South is a lost cause 90% of the time unless you know exactly where the other team is.
You can set the question to every map. Not all map area is good for all tanks. Like how often you see STRVs or Grilles finding their favourite places in cities ?, or slow Heavies on open fields or camping in the bushes. That's why we have different composition of tanks in the game so that everyone can find their best spots on maps.
With MT/fast TD/LT you can go into agressive bush at the field and spot almost all tanks at the back if U have more than 430m viewrange. 😉 Pretty much everytime at least 4K spot

When you talk about playing the north are you coming at this from a North spawn? You don't expect the South spawn to rush into the north or are you?
